Herb & Tomato Braised Beef Stew - Cook Club
In search of a hearty, comforting meal? Follow along this Herb & Tomato Braised Beef Stew for an incredible dish that everyone will love!

(PS. Feel free to swap out the beef for mushrooms🍄 to create a plant-based meal even your veg friends will love!!)

BASE

⁃ 1 red onion, sliced
⁃ 1 leek, sliced
⁃ 2 tbsp grass-fed butter
⁃ 2-3 pounds grass-fed/finished beef (stew cut)
⁃ 5/6 sliced and sautéed cremini or wild mushroom
⁃ 1 zucchini, diced
⁃ 1 pint of cherry tomatoes, roasted
⁃ salt and pepper to taste

BROTH BRAISE

⁃ 1 quart of Ripe Beef Broth
⁃ aromatic herbs (thyme, garlic, rosemary)
⁃ 500ml organic full bodied red wine (we used chianti)

GARNISH

⁃ chopped herbs (we used dill and chives)
⁃ shaved fennel
⁃ Ripe Calabrian Chilli Oil
